If you’ve seen glossy red, spice-crusted fried chicken taking over your feed, that’s Nashville hot chicken — and it has one of the most devoted followings in food. Here’s what it actually is, what sets it apart from regular fried chicken, and how we make ours 100% halal here in Vancouver.

Where it comes from

Nashville hot chicken was born in Nashville, Tennessee. The story goes that it started as a spicy “revenge” seasoning that backfired — the person it was meant to punish loved it, and a whole style of chicken was born. Today it’s a genuine American food category with a global fanbase.

What makes it “Nashville hot”

Regular fried chicken gets its flavour from the breading and the brine. Nashville hot chicken adds one crucial step: after the fry, the chicken is lacquered in a fiery, cayenne-forward paste (traditionally cut with some of the frying oil), so the heat sits right on the crust.

That after-the-fry finish is the whole point — and it’s exactly how we build flavour at Kaji Glaze. We fry to order, then hand-glaze after the fry so the crust stays crunchy and the flavour stays glossy and bold. It’s why the brand is called Glaze.

Nashville heat runs from a gentle warmth to genuinely intense. Our glaze system spans the full range, so you can order to your tolerance:

Prefer sweet over spicy? The same crispy chicken comes in Honey Garlic, Teriyaki, and Yuzu Pepper, plus deep, savoury Kaji Original and Korean-style Spicy Gochujang — seven signature glazes in total.

How we make it halal

Here’s what matters to a lot of people, and where we’re different: Kaji Glaze is 100% halal — the whole kitchen, every item, no exceptions. We use only chicken, sourced from halal suppliers, with no pork and no alcohol anywhere in the kitchen. That means there’s no “halal section” to worry about and nothing to cross-contaminate — you can order anything on the menu with confidence.

To be clear and accurate: our chicken is halal-sourced, and we’re transparent that we’re not yet third-party certified — certification is a trust upgrade we’re working toward.
